1/2 cup butter, melted
1/4 cup olive oil
1/4 cup minced fresh herb, parsley and thyme
3 tablespoons fresh lemon juice
3 large garlic cloves, crushed
1 tablespoon minced shallot salt and pepper
1 1/2 lbs shrimp, unpeeled medium to large spinach leaves ( to garnish) lemon slice ( to garnish)
Mix the 1st EIGHT items in bowl. Blend in shrimp.
Allow to marinate for approximately 60 min, mixing from time to time.
After this, thread the shrimp onto skewers and grill them till become opaque, approximately 120 seconds each side.
Use the spinach for lining the dish. Then organize the skewers over the dish and use the lemon as garnish.
